Cheezy Bac’n Mini Omelettes

Breakfast might be the most important meal of the day, but it’s also often the most hurried and time pressed meal of the day.  We’re always rushing off to work or school in the morning, and sustenance is not a priority.  Unfortunately, there’s not much we can do to make breakfast any more leisurely but I’m always searching for ideas, recipes and products that can provide a quick, hearty, and nutritious solution to the rushed morning meal problem.

While I tend to rely on smoothies for an on-the-go breakfast, Just Egg has been a gamechanger for me. Their products make it possible to have a hot, satisfying meal in a matter of minutes, but aside from their as is qualities, they are also versatile products that open a lot of vegan recipes that would have otherwise been time consuming and difficult.

This simple recipe makes use of the unique properties of the liquid Just Egg to produce perfectly dense, but fluffy mini-omelettes that can be eaten cold as your running out the door, or reheated in the microwave in a matter of seconds!

Ingredients
(makes 12 mini-omelettes)}
200g package of vegan bacon, diced (I used King’s Cafe Vegan Bacon)
1 tbsp of olive oil
3 x 355g bottles of Liquid Just Egg
1 tsp of garlic powder
1 tbsp of paprika
1 tsp of minced cilantro
1 tsp of minced onion
1 cup vegan cheddar shreds

Directions
1. Preheat oven to 350 degrees
2. In a frying pan, heat 1 tbsp of olive oil over medium heat. Add the diced vegan bacon. Cook for 8 to 10 minutes until crispy. Remove from heat and set aside.
3. In a large mixing bowl, add the 3 bottles of Liquid Just Egg, 1 tsp of garlic powder, 1 tbsp of paprika, 1 tsp of minced cilantro, 1 tsp of minced onion, and the 1 cup of vegan cheddar shreds. Mix until the spices and cheese are blended into the egg mix.
4. In a 12-slot silicon muffin tray, evenly divide the egg mix between the cup pits.
5. Bake at 350 degrees for 30-35 minutes. Use a fork to test to see if the center is cooked.

I like to eat these with a bit of ketchup on top, but feel free to top with your favourite condiments.
